Join us for our “Healthy Happy Hour” with special guest, Rachel Beller MS, RDN who has provided delicious healthy food and beverage recipes (below) that you can make in advance and enjoy during this FUN virtual gathering! 

Rachel is a Registered Dietitian Nutritionist (RDN), founder of Beller Nutrition and creator of the Beller Nutrition Masterclass.  She specializes in oncology and weight management.

She is also a spokesperson for the American Cancer Society and a three-time bestselling author who frequently appears in the media including Good Morning America, Dr. Oz, CNN, ABC World News Tonight, Rachael Ray and The Biggest Loser!

Rachel has given the traditional happy hour a healthy twist just for us with her delicious and nutritious “Hummus 3 Ways” and “Pomegranate Mojito Mocktail” recipes.

This “Healthy Happy Hour” is hosted by your SABSC tour guides Hayley Dinerman (TNBC Foundation), Ricki Fairley (TOUCH, The Black Breast Cancer Alliance) and Melissa Berry (Cancer Fashionista Foundation).

Recipes

Hummus 3 Ways (or more!)

After making this, you’ll never settle for plain store-bought hummus again! Think of hummus as a blank canvas in which to stir in a wide range of flavorful spices. And you also get to control the quality of the oil and ingredients. My go-to’s are my Savory Sizzle power spicing nutrition blend and the antioxidant combo of cumin, paprika or za’atar which lends a distinctly Middle-Eastern flavor.

Makes 8 servings
Serving size: ¼ cup 
Vegan, Gluten-Free

Ingredients:

2 cups chickpeas, rinsed and cooked
1 large garlic clove, chopped
3 tablespoons extra-virgin olive oil
¼ cup fresh lemon juice (about 1 large lemon)
½ cup tahini
½ teaspoon cumin
Sea salt to taste
2 to 3 tablespoons water (optional to reach desired consistency)

Toppings:
Spice of choice: 1 tablespoon of Savory Sizzle blend by Rachel Beller Nutrition or a combo of paprika and cumin or za’atar.

Directions:

  • Combine the chickpeas, garlic, oil, lemon juice, tahini, cumin and salt to taste in a food processor or blender until fully incorporated.
  • Add water, 1 tablespoon at a time as needed, to reach desired consistency.
  • Taste and adjust the seasoning as needed (I often like to add more lemon juice).
  • When serving, swirl in the spice of choice.  
  • Serve with Mary’s Gone Crackers or Simple Mills Almond Flour Crackers.
Hummus

Pomegranate Mojito Mocktail

If pomegranate seeds were people, they'd be the life of any party. That being said, they definitely have a place in a mocktail. Pomegranate seeds are rich in punicic acid which emerging research suggests may have cancer protective properties. Even better, pomegranate seeds pack powerful antioxidant and anti-inflammatory properties. So party hearty, pomegranate seeds! You’ve earned it! 

Makes 1 serving

Ingredients:

2 oz pomegranate juice
Half lime cut in wedges
6-8 mint leaves
1 cup soda water
Optional: honey or monk fruit sweetener

Directions:

  • Place lime wedges, sweetener (if using) and pomegranate juice in a glass. Muddle gently until all the juice has been pressed out of the lime.
  • Rub mint leaves together in your hands to release the scent and add to the glass. Give the mint a gentle press a couple of times with the muddler.
  • Add ice to the glass and top with soda water. Stir well.
  • Garnish with mint and lime.
